Ingredients
- 270g soft light brown sugar
- 200g peeled ripe bananas mashed
- 280g plain flour
- 1 tsp baking powder
- 1 tsp bicarb of soda
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 2 eggs
- 140g unsalted butter, melted
Method
- Grease a 23 cm x 13 cm loaf tin.
- Pre heat oven to 170C / gas mark 3
- mix sugar and eggs and using hand blender, beat until well incorporated.
- Beat in the mashed bananas.
- Add the flour, baking powder, bicarb of soda, cinnamon and ginger into the wet mixture.
- Pour in the melted butter and beat until well mixed.
- Pour into prepared loaf tin
- Bake for 1 hour
- Allow to cool
- EAT!!!
